Restaurant cooking equipment repair across Orange County, same day, Monday to Saturday. Gas floor fryers, ranges, griddles and charbroilers; convection, combi, deck, pizza and rack ovens; salamanders, cheesemelters, steam tables and hood exhaust fans, from Blodgett, Vulcan, Rational, LBC, Pitco, Frymaster, Garland, Imperial, Southbend, Bakers Pride and other brands. The service call is $79 and is applied to the repair when you approve it, and you get a firm written price before any work starts.

When the fryer will not light at 10:30 or the convection oven is 60°F low during Friday prep, every hour costs covers. Most cooking equipment failures are a short list of parts: thermopiles and pilot assemblies, igniters and flame sensors, gas valves, thermostats and high-limits, blower motors, door switches and relays. We carry them for the common brands, and the technician you talk to on the phone has fixed the same fryer before. Our commercial write-ups include a gas fryer thermostat in Irvine, a fryer gas valve in Tustin, a Blodgett oven with a failed motor, an LBC oven not holding temperature and a Blodgett combi that would not start in a new Costa Mesa restaurant.

Common cooking equipment problems and how we fix them

Fryer will not light, or the pilot keeps going out

Likely causes: on a millivolt fryer, a weak thermopile or a dirty pilot; on an electronic-ignition fryer, a failed igniter, flame sensor or ignition module; on either, a failed gas valve, a tripped high-limit, or a draft from the hood blowing the pilot out.

Try this first: follow the lighting instructions on the door once, holding the pilot button a full minute. If the pilot lights and dies when you let go, the thermopile is weak. Press the high-limit reset once, not repeatedly.

How we fix it: we measure the thermopile output, clean or replace the pilot assembly, replace the igniter, module or gas valve, and verify the burner lights and holds. See the Tustin fryer gas valve repair.

Fryer will not hold temperature, or overheats

Likely causes: a drifting or failed thermostat, a failed temperature probe or controller on electronic fryers, a gas valve that sticks, a high-limit tripping early, or a burner that is sooted and starving.

Try this first: check the oil temperature with a thermometer against the dial. A fryer that runs 25°F or more off, or that smokes at a normal setting, needs a thermostat.

How we fix it: we replace the thermostat, probe, controller or valve, clean the burners and calibrate, as in the Irvine fryer thermostat repair.

Convection oven not heating, not holding temperature or fan not running

Likely causes: a failed igniter or flame sensor on gas ovens, a burned element or contactor on electric ovens, a failed blower motor or motor relay, a door switch that stops the fan and the burner, a thermostat or temperature probe, or a failed control board.

Try this first: make sure both doors close and latch; most convection ovens cut the burner and fan when the door switch opens. Check the breaker and the gas valve behind the oven.

How we fix it: we test the ignition, the motor, the switch, the probe and the control and replace what failed. See the Blodgett oven motor replacement and the LBC oven door lock and relay repair.

Combi oven error code, no steam or will not start

Likely causes: scale in the steam generator or boiler, a failed water inlet valve or water-level sensor, a failed drain valve, a blocked or wrong-pressure water supply, a failed heating element or igniter, or an installation problem on a new unit.

Try this first: confirm water and drain are connected and the supply is on, and note the exact error code and the model. Run the oven’s cleaning or descaling cycle if it has been skipped.

How we fix it: we read the code, descale the generator, replace valves, sensors or elements, and correct the installation, as with the Blodgett combi in a new Costa Mesa restaurant.

Range, griddle or charbroiler burners out, weak or yellow

Likely causes: a clogged burner or orifice, a failed pilot or thermocouple, a failed gas valve, a griddle thermostat, a regulator problem, or a gas supply that cannot feed everything that is lit at once.

Try this first: clean the burner ports and check whether the problem follows one burner or affects the whole line. Yellow, lazy flames across every piece of equipment point to the supply or regulator.

How we fix it: we clean or replace burners and orifices, replace pilots, thermocouples, valves and thermostats, and set the regulator. Supply-line and gas-pressure problems upstream of the equipment are referred to a licensed plumber.

Pizza, deck or rack oven slow, uneven or not rotating

Likely causes: a failed thermostat or probe, a burner or igniter problem on one deck, a failed combustion blower, cracked deck stones, a drive motor, chain or bearing on a rotating rack oven, or a conveyor drive on a conveyor oven.

Try this first: note which deck or which side runs cold, and whether the rack or conveyor moves at all.

How we fix it: we repair the ignition and burner on the affected deck, replace blowers, probes and thermostats, and repair the drive on rack and conveyor ovens.

Hood exhaust fan not running or belt squealing

Likely causes: a failed fan motor or capacitor, a worn or broken belt, a seized bearing, a failed switch or a tripped breaker on the roof unit.

Try this first: check the switch and the breaker. A hood that pulls no air cannot be run under, and the fire system may require it.

How we fix it: we replace the motor, capacitor, belt or bearings and the switch. We do not do hood and duct grease cleaning; that is a certified hood-cleaning company.

Cooking equipment jobs we have written up

What restaurant equipment repair costs

The service call is $79. That covers the trip and the on-site diagnosis, and it is applied to the repair when you approve it. After the diagnosis you get a written price for parts and labor, and that price does not change once the work starts. Thermopiles, pilots, thermocouples, igniters, door switches and relays are the affordable end. Gas valves, thermostats, blower motors and probes are the middle. Combi oven boards, steam generators and rack oven drives are the expensive end, and we tell you where your repair sits before ordering. If a piece of equipment is not worth repairing, we say so and you pay only the $79.

RepairTypical price, parts and labor
Fryer thermopile, thermostat or high-limit$250 to $550
Fryer gas valve$400 to $900
Range or griddle burner valve, pilot or igniter$200 to $500
Convection oven motor or blower$450 to $1,100
Convection oven thermostat or control board$350 to $900
Combi or steam oven descale and valve service$300 to $700
Door gasket, hinge or latch (oven)$250 to $600
Exhaust hood fan motor or belt$350 to $900

Typical Orange County ranges for parts and labor on common models; the service call is $79 and is applied to any of them. Built-in, professional and commercial units, and parts that have to come from the manufacturer, can run higher. You get the exact written price after the diagnosis and before any work starts.

How a cooking equipment service call works

  1. Call. Call (949) 544-5550 or book online, and tell us the equipment, the brand and model, and what it is doing. Down during service goes first.
  2. Diagnose on site, around your line. We test ignition, gas valves, thermostats, motors and controls while the rest of the kitchen keeps working.
  3. Written price. You approve the parts and labor before work starts. The $79 service call is applied to it.
  4. Repair. Thermopiles, pilots, igniters, thermostats, switches and relays for common brands are on the van; valves, motors and boards come from Orange County distributors, usually the next business day.
  5. Warranty. Parts and labor on the repair are under warranty. If the same problem comes back within 90 days, the return visit has no service-call fee.

Restaurant equipment repair FAQ

How much does restaurant equipment repair cost in Orange County?

The service call is $79 and is applied to the repair. Pilots, thermopiles, igniters and switches are the affordable end; gas valves, thermostats and motors the middle; combi boards and steam generators the expensive end. You approve a written price before any work starts.

Do you repair Rational and Blodgett combi ovens?

Yes, including descaling, water valves and sensors, elements and igniters, and installation corrections on new units.

Do you repair Pitco and Frymaster fryers?

Yes, millivolt and electronic-ignition fryers from Pitco, Frymaster, Dean, Vulcan, Imperial and others: thermopiles, pilots, igniters, gas valves, thermostats and high-limits.

Do you do gas line installations or hood cleaning?

No. We repair equipment that is already connected; gas line work is for a licensed plumber, and hood and duct grease cleaning is for a certified hood-cleaning company. We do repair hood exhaust fan motors, belts and switches.

Can you come today? The fryer is down before lunch.

Usually yes. Call rather than book online, and equipment that is down during service goes ahead of non-urgent work.

Do you offer maintenance for restaurant kitchens?

Yes. Fryer thermostat calibration, pilot and burner cleaning, convection oven door and motor checks and combi descaling on a schedule prevent most emergency calls. Ask when you book.
